Cuvée Paredaux Rouge is built as a proper Languedoc blend that adds Cabernet Sauvignon to the party. The blend of 30% Cabernet Sauvignon, 20% Mourvèdre, 20% Syrah, 20% Grenache, and 10% Carignan is farmed under "agriculture raisonnée," their version of conscientious, low-impact, sustainable viticulture. In the cellar, Paredaux Rouge mirrors the Blanc in its precision—temperature-controlled fermentations, careful pump-overs, and gentle pressing; however, here the focus is on capturing the spice, dark fruit, and garrigue of the hillsides.
Together, Paredaux Blanc and Rouge give you a ready-made dynamic duo for a party or the table: Paredaux Blanc for seafood, salads, and lighter fare, and Paredaux Rouge for anything from roast chicken to braised short ribs.
