This is another spot-on pick from our Asheville friend and neighbor Jason Tippetts. Domaine des Lauriers' Pays d'Oc IGP Cuvée Paredaux Blanc and Rouge land right in our vinous sweet spot—honest, place-driven wines, and, for AWM locals and newsletter folks, a lot of bang for the buck. They're bottles you can truly enjoy, knowing there's a real family and a real patch of earth behind them.
The Languedoc is a long stretch of Mediterranean coastline between the Rhône and Spain that's a vinous playground for almost every style of wine you can imagine. If you love bright, snappy whites and reds with plenty of lift and character, then this south-western corner of France is loaded with options for you. The key to this varied vinous pleasure is the super-flexible Pays d'Oc IGP designation. Happily, this allows vignerons to blend local, non-traditional, and "international" grapes way more freely than the more strict, traditional AOC/AOP-designated regions.
Domaine des Lauriers is a quintessential boots-on-the-ground family-owned-and-operated endeavor. The Cabrol family started collecting vineyards around Castelnau-de-Guers, Sète, and Montpellier in 1969 and has gradually grown the Domaine to roughly 45–50 hectares spread across Mediterranean garrigue and marly slopes. They farm a stunning mix of 14 grape varietals, from the ubiquitous stalwart Picpoul to oddballs like Terret, Rolle (Vermentino), and a full cast of southern red characters.
Marc Cabrol currently manages the family Domaine and is known as both a meticulous grower and a bit of an agricultural gear-head when it comes to farming machinery. Vineyard logistics and cellar practices are fully dialed in, and traditional mindset and methods meet cutting-edge gear, resulting in wines that deftly balance Languedoc tradition with modern innovation.
The Cuvée Paredaux Blanc is a very Languedoc kind of blend. 60% Terret joins 40% Rolle (Vermentino), all harvested from hillside marls thanks to the Pays d'Oc IGP designation. Terret brings the lean, saline backbone, while the Rolle adds a soft and subtle Mediterranean feel with stone fruit and supple texture. The grapes are harvested into stainless-steel trailers with sealed lids, gently pressed in pneumatic presses, and fermented cool under inert gas, keeping things wonderfully fresh and clean. It's a white that's coastal and lifted in with ample fruit to do double duty as an aperitif or at the table.
In your glass, Cuvée Paredaux Blanc's light hue leads to aromas of lemon zest and white peach, framed by hints of fennel fronds and chamomile on the edges. The palate is a fresh and lively blend of citrus, just-ripe pear, a gentle touch of almond, and a faintly salty snap through the middle that keeps you reaching for another sip.
Classic local Languedoc pairings like grilled sardines, shellfish platters, brandade, or simply roasted fish with olive oil and herbs are no-brainers. Feel free to stray off the beaten path with Thai or Vietnamese dishes that lean into lemon, lime, and fresh herbs; green-olive chicken; a simple lemony pasta with olive oil and greens; or even Carolina shrimp and grits when you want something bright to cut through the richness.
