Our first winery visit on the AWM Spring Market and Wine Tour was Château de Valflaunès. It was a wonderful place to start, and it set the tone—and a high bar—for the rest of the trip.
Château de Valflaunès is located in Pic Saint-Loup, one of my favorite appellations in the Languedoc. The region is known for limestone soils, warm sunny days, cool breezy nights, and wines that deftly balance the big southern French fruit with gorgeous lift and freshness.
These wines are another great selection brought to us by Asheville’s own Jason Tippetts, owner of Barrique Imports and Piéton Market Tours.
Pic Saint-Loup sits north of Montpellier in southern France. The limestone peak that gives the region its name rises above the vineyards, and the surrounding hills help shape the climate.
The main red grapes here are Syrah, Grenache, Mourvèdre, Carignan, and Cinsault. With whites, producers often declassify to Vin de France to work with grapes that fall outside the AOC regulations.
At Château de Valflaunès, owner and winemaker Fabien Reboul blends tradition and innovation, pairing organic farming with a practical, vineyard‑first approach to produce wines that reflect the distinctive terroir of Pic Saint‑Loup. His steady, thoughtful work has earned the domaine a quiet but loyal following—evident in the steady stream of locals who drive up to buy directly from the cellar.

Pourquoi Pas? — “Why Not?”
Pourquoi Pas? is a white made from Roussanne, Marsanne, and Rolle, also known as Vermentino.
Pourquoi Pas? is built on Roussanne and Marsanne, with a touch of Rolle (Vermentino), from organically farmed vineyards on limestone-clay soils.
In your glass, ripe stone fruits, apple, and lemon peel greet on the nose, framed by just a hint of fresh herbs. The clean medium-bodied palate is driven by stone-fruit and citrus flavors, finishing with a hint of honey and classic Rolle mineralality and salinity.
Pour it alongside roasted or grilled white fish with lemon and herbs, shrimp or scallops with fennel, garlic, and olive oil, herb-roasted chicken, or chicken with olives and preserved lemon. It’s also great for vegetarian fare, especially ratatouille, grilled zucchini and peppers, vegetable tarts, and mild to tangy cheeses such as fresh goat cheese or young sheep’s milk cheese.
